One of my favourite Okra/ Bhindi recipes – “Bharwa Bhindi” is a mouth – watering recipe. Serve it with rice or roti this yummy dish is enjoyed by one and all.
Serves: 3 to 4 Person

Preparation time: 10 to 15Mins
Cooking Time: 15 to 20 Mins
Ingredients:
300 g okra/ lady finger
5 tbsp besan / gram flour
1 ½ tsp dry mango powder/ amchur
3 tbsp cumin – coriander seed powder
1 tsp red chilli powder
½ tsp garam masala
½ tsp turmeric powder
¼ tsp asafetida
2 ½ tbsp oil
Salt as per taste
Chopped coriander leaves to garnish
Method:
Wipe the okras with a dry towel. Cut off both ends and slit each okra lengthwise. Be careful not to split the okra into two.

Take a bowl and mix in besan, amchur, cumin – coriander seed powder, red chilli powder, garam masala, turmeric powder, asafetida and 1 tbsp oil. Mix well to form a dry mixture.

Carefully stuff the mixture into the okras and keep aside. Do not over stuff the okras.

Heat remaining oil in a non – stick pan. Add the stuffed okras to it. Season with salt, as per taste. Cover and cook okras over a low heat for 10 to 15 minutes or until cooked.

You might need to give a gentle shake in between to make sure that okras are not sticking to the bottom. Avoid using a spoon or a spatula as it might break okras resulting the stuffing to come out.
Once done, garnish with fresh chopped coriander leaves and serve hot with Roti or Parathas
