“Aloo Toast” is one of most simple recipe that even a kid can cook. This sandwich is quite filling and can be enjoyed during anytime of the day. You can get really creative with it and combine it with coriander chutney, fresh cut salad, cheese, mayonnaise, etc. This however, is the simplest and the easiest version of all.

Serves: 2 Sandwiches
Total Time: 15 Minutes
Ingredients:
½ cup Leftover or freshly boiled potato mashed
1 tbsp chopped coriander leaves
½ of small onion, chopped
½ of small tomato, chopped
¼ tsp chilli powder
¼ tsp turmeric powder
½ tsp cumin powder
½ tsp chaat masala
½ tsp lemon juice
1 tsp sugar
Salt as per taste
4 brown bread slices
Butter to smear on bread
Method:
Combine all ingredients in a bowl. Use a fork or your hands to mix properly. Divide the mixture into 2 equal portions and keep aside.

Smear butter over both sides of your bread slices.

Place the mixture between 2 slices of bread to make a sandwich. Now toast or grill the sandwich.

Cut diagonally or as required and serve with ketchup.
